Last night, we featured a Pan-Roasted Rockfish that was topped with Watermelon & Feta Salsa. The plates flew out the door at record pace, and we can’t help but think that the combination of savory, grilled fish and such a fresh, flavorful salsa is what sold our customers.
Summer is the perfect time to grill, smoke, and roast meat and top it with something simple, fresh, and unexpected. A little chill, a little sweet, a little texture goes a long way. Salsas and relishes are easy to make ahead, they taste better after the flavors have melded, and they add such beautiful color and depth to a slab of charred anything. Well, not anything, but you get the point. They’re wonderful because they aren’t exact. Throw together interesting combinations, pair new things, and top with confidence!
Watermelon & Feta Salsa
{Amount of each ingredient below will depend upon how many plates you’ll be serving. Allow for about 1/4 cup per plate. Just go with it, people!}
Diced Watermelon, Crumbled Feta Cheese, Halved Cherry tomatoes, Diced Vidalia Onion, Torn Fresh Basil, Pinch of Sea Salt, Pinch of Pepper, Dash of Olive Oil.
Mix all ingredients together and chill in the refrigerator until ready to use. Serve with meat, fish, poultry, pork, etc.
